If I've got two beefy SUNON 80mm BX jobbies plugged into the mobo would that be sucking the life out of my 5V rail??? :(

Possibly yes, what is it at now? What's ur psu? I think 4.84v is the lowest you'd want to go for stability. I wouldn't run them off the mobo if they are high voltage suckers (burn the headers if something turns to custard).

I hit 4.78v sometimes when oc'ed highly and then I get random resets.

I got a 350 enermax coz I'm cheap.......... though with it's fans on max its taken my CPU temp down a bit 29-30° while surfing.... the 5V rail drops to 4.86.... I think I'll get a molex splitter thing anyway and see if that helps :(

no, wouldn't the fan run on 12V?
and I have a couple of sunon 80mm fans pluged into my mobo without any problems,

BX or S2 sunons? The BX sucks more juice.

I probably would run them of a x myself.

true, Personally, I would run them of the PSU

4.86v is way too low, what M/B are you using also? My last PSU was an Enermax 350watt, I never had any fans running of the M/B and and my 5volt rail was reading 5.01 volts under load.

So I would defently run them off a molex.
